Etymology: < French margarine (M. E. Chevreul 1813, in Ann. de chim. 88 231) < μαργαρ- (in ancient Greek μαργαρίτης margarite n.¹) + French -ine -ine suffix⁵ (with change in the form of the suffix in English: see -in suffix¹). The substance was so called on account of its having the appearance of mother-of-pearl. N.E.D. (1905) gives the pronunciation as (mā·ɹgărin) /ˈmɑːɡərɪn/.

Chemistry. Obsolete.

A glyceryl ester of margaric acid.The margarine of Chevreul was really a mixture of stearin and palmitin. Cf. margaric adj. 1a.
