1. The pancreas, or the thymus gland, of an animal, esp. as used for food (distinguished respectively as heart sweetbread, stomach sweetbread, or belly sweetbread and throat sweetbread, gullet sweetbread, or neck sweetbread): esteemed a delicacy.
