Origin: Partly a borrowing from German. Partly a borrowing from Yiddish. Etymons: German Schmalz, Yiddish shmalts.
Etymology: Originally (i) < German Schmalz fat, lard, dripping, also (in extended use) excessive sentimentality (see smolt n.2). In later use also (ii) < Yiddish shmalts < Middle High German smalz, the antecedent of the modern German noun.
1. Chiefly in Jewish and German cookery: rendered animal fat, esp. chicken or goose fat. Also: †melted butter (obsolete).
