Etymology: < French papaïne (A. Wurtz and E. Bouchut 1879, in Comptes rendus 89 428) < papaye papaya n. + -ine -in suffix1.
Biochemistry.
A proteolytic enzyme present in the unripe fruit and latex of the papaya, Carica papaya, and used esp. as a meat tenderizer, in clarifying drinks, and as a food supplement to aid digestion; a preparation containing this enzyme.
