A colourless oily liquid produced, together with acetone, by distilling a mixture of cane sugar and lime.Metacetone was identified by some chemists with diethyl ketone (formerly called propione), but it was later thought to be a mixture of organic compounds including propionaldehyde (see quot. 1889).

1838 T. Thomson Chem. Org. Bodies 364 M. Fremy discovered that when 1 part of sugar is intimately mixed with 8 parts of unslacked lime, and distilled, the product consists of two liquids, one of which is acetone, and to the other he has given the name of metacetone.

1844 G. Fownes Man. Elem. Chem. 409 M. Frémy calls this substance metacetone; it contains C₆H₅0, and is consequently isomeric with Dr. Kane's oxide of mesityle.

1851 Jrnl. Chem. Soc. 4 3 Further researches are required in order to show whether Frémy's metacetone is merely a mixture containing propione as one of its constituents, or whether it be a definite compound.
