Origin: Perhaps of multiple origins. Partly a borrowing from Italian. Perhaps partly a borrowing from French. Etymons: Italian marinare; French mariner.
Etymology: < Italian marinare (perhaps in past participial stem marinato , compare -ate suffix3; a1587 as verb, a1535 in past participle), perhaps reinforced by its probable derivative French mariner (1636; 1546 in Middle French in past participle; compare marine v.). Italian marinare is < post-classical Latin marina brine, short for classical Latin aqua marīna sea water < classical Latin aqua water (see aqua- comb. form) + marīna , feminine of marīnus marine adj.; the Latin collocation occurs already in a culinary context in Apicius (in probably 3rd-cent. material) in a description of boiling meat in ‘sea water’ with herbs until tender; compare also Cato De Agricultura 106, where a preparation of salt water and wine is described. Compare post-classical Latin marinare to steep in brine (1223 in a British source), Spanish marinar (1519). Compare earlier marine v.In earlier use in English as in other foreign languages apparently referring to steeping food (especially fish) in preparations (especially containing brine or heavily salted) intended for preservation as well as for flavouring or tenderizing. With the form marrionate (see quot. 1653 at sense 1a), compare marrionate , variant of marinate adj., in T. Barker's Barker's Delight.
