gravlax, n.|ˈgrævlæks| Also gravlaks, gravad lax. [Sw. gravlax (Norw. gravlaks), f. grav grave, trench (f. grava (Norw. grave) to dig, bury) + lax (Norw. laks) salmon (see lax n.1); so called because the salmon was originally marinated and fermented in a hole in the ground. The variant element gravad, pa.pple. of grava and the only form of the vb. extant in mod. Sw., has evolved the meaning ‘raw and spiced’, and now occurs in the names of similar dishes, such as gravad makrel.] A Scandinavian dish consisting of dry-cured salmon marinated in a mixture containing salt, spices, and dill.
