sarcosine[′sär·kə‚sēn] (organic chemistry) CH3NHCH2COOH Sweet-tasting, deliquescent crystals; soluble in water, slightly soluble in alcohol; decomposes at 210-215°C; used in toothpaste manufacture. Also known as methyl glycocol. Sarcosine (also N-methylglycine), CH3NHCH2COOH, a methyl derivative of the amino acid glycine. It is an intermediate metabolic product, serving in the body as a source of methyl groups in transmethylation reactions.
