vegetable gelatin n. any of several gelatinous substances obtained or manufactured from plants; spec. (a) one of the constituents of gluten (now rare); (b) any of several substances used in place of animal gelatin in cooking, esp. agar, chiefly obtained from seaweed; cf. vegetable jelly n.
