Etymology: < German Springerle (also German regional (Switzerland) Springerli), originally a German regional (southern) diminutive formation (compare -le suffix) < Springer springer n.1, probably either with allusion to the way in which the dough ‘springs up’ from the baking tray during cooking to create the characteristic ‘foot’ on the base of the biscuits, or reflecting the specific senses ‘knight (in chess), jumping horse’ with allusion to the one of the designs traditionally stamped on to them.The unchanged plural form reflects the German plural.
Originally and chiefly North American.
A pale, hard biscuit of a type originating in Germany, flavoured with anise and imprinted with any of various designs, and traditionally served at Christmas. Also more fully springerle cookie.
