Forms: α. 1600s sydowe, siddowe (1600s, 1800s seedow), 1700s– siddow, 1700s–1800s sidda. β. 1700s sidore, 1800s sidder ( cidder).
Etymology: Of obscure origin.Previous versions of the OED give the stress as: ˈsiddow.
Now dialect.
Soft, tender, mellow. Current in West Midland counties, chiefly of peas, grain, or other vegetables. It is doubtful whether Grose is right in giving the word as a noun and verb.Holland seems to have supposed the word to mean ‘fit to serve as seed’.

1789 W. Marshall Rural Econ. Glocestershire I. 331 Peas, which become soft by boiling, are said to be ‘siddow’, a well sounding term, which is much wanting in other districts.
1854 A. E. Baker Gloss. Northants. Words II. 233 Sidder, a term applied to malting barley. A shower of rain on barley, after it is cut, is said..to make it sidder, i.e. promote its growth in the cistern and make it work better.
1881 S. Evans Evans's Leicestershire Words (new ed.) Sidder, light; loose; friable; mealy: applied to soil that breaks up readily, peas that boil to a flour, yeast dumplings that are properly swelled, &c.
