Origin: A borrowing from French. Etymons: French savoroye, saveraye, savoree, savereye.
Etymology: < Anglo-Norman savoroye, saveroy (13th cent.), saveraye (c1300) and Old French savoree (13th cent.), Middle French savereye (14th cent.; French †savorée ), probably a variant or alteration (perhaps by association with saver , savor savour n.) of Old French sadree (end of the 11th cent.), sarree (12th cent.) < classical Latin saturēia , of unknown origin. With the likely alteration compare Anglo-Norman saporee , a learned alteration of savoree after classical Latin sapor taste, flavour (see sapor n.).Compare Old Occitan sadriega (c1280; > Middle French sadriege (1528)), Spanish ajedrea (end of the 14th cent.; 13th cent. as †asadrea , †axedrea , †assadrea , etc.; via Arabic aš-šaṭriya ), Italian satureia (14th cent.), santoreggia (c1350), all < classical Latin saturēia . Classical Latin saturēia was also borrowed into Germanic languages; compare Old English sæþerie (see below) and saturege satury n. (apparently reflecting two separate borrowings), Middle High German saturei , saterie (German Saturei ). The precise range of meaning of Old English sæþerie (also saðrige ) is uncertain; it probably denotes summer savory, perhaps also wild basil. The date at which it was borrowed from Latin into Old English is uncertain and disputed; conflicting accounts have been offered for its phonological form on the basis of either earlier or later borrowing. Any plant of the genus Satureja (family Lamiaceae ( Labiatae)), comprising aromatic herbs and low shrubs from the Mediterranean and south-west Asia; esp. either of two plants used as culinary herbs, (more fully summer savory, garden savory) the annual S. hortensis, and (more fully winter savory, mountain savory) the perennial S. montana, both native to southern Europe.
