Origin: A borrowing from French. Etymon: French sabrage.
Etymology: < French sabrage (1989 or earlier in this sense; 1895 in the general sense ‘action of striking with a sabre’) < sabrer sabre v. + age -age suffix.The origin of the technique is often accredited to French Hussars during the Napoleonic Wars.
The action or an act of opening a bottle of champagne by sliding the dull edge of a sabre blade quickly down the neck of the bottle and then slicing off the top; the skill or technique of doing this.Used chiefly at ceremonial or other special occasions.

1986 Harpers & Queen May 211/3 Jean-Marie Dubois started the spectacular show, by conducting the 'Sabrage' of a Salmanazar (equivalent to 12 bottles of Moët et Chandon),..taking a ceremonial sword and cutting the top off the Salmanazar, with one swift stroke.
2015 San Jose (Calif.) Mercury News (Nexis) 2 Feb. You don't need a fancy sword for sabrage, but Beller's saber of choice is an antique Hussar blade.
