Origin: A borrowing from Latin. Etymon: Latin pistor.
Etymology: < classical Latin pistor baker, miller < pist- , past participial stem of pīnsere to pound (see pisé n. and adj.) + -or -or suffix. Compare Anglo-Norman pestur, pestour, pistour, etc., Middle French pystre, pisseteur (late 12th cent. in Old French as pestor), early modern German pistor (1571).The word is perhaps attested earlier as a surname: Robertus pistor (1115), William Le Pestur (1239), John Pistor, peleter (1281), etc. However, these are perhaps better interpreted as the Anglo-Norman word or as Latinizations of the surname Baker (see baker n.). Earlier currency is perhaps implied by the following:c1200 in J. T. Gilbert Hist. & Munic. Documents Ireland (1870) 24 Walter le pestur de Wiricestra. However, it is unclear whether this is to be interpreted as Middle English or as the Anglo-Norman word and, in any case, it may represent the surname. The following example, from a macaronic text, probably shows the Latin word:1424–5 in J. T. Fowler Extracts Acct. Rolls Abbey of Durham (1899) II. 371 Thomas Robynson Milner & pistor. Originally: a person who grinds corn, esp. without the use of a mill; a person who prepares corn or other grain for grinding. In later use also: a baker.
