Origin: Apparently from a proper name, combined with an English element; apparently modelled on a French lexical item. Etymons: proper name Petiot , -ization suffix.
Etymology: Apparently < Petiot, the surname of the laboratory assistant of the French chemist, Louis-Jacques Thénard (see Thénard's blue n.), the two men having together devised the process (although it was also known in the Middle Ages) + -ization suffix, apparently after French petiotisation (not dated in dictionaries of French). Compare German Petiotisieren (1888 or earlier), Swedish petiotisering (1873–5 or earlier).
Winemaking. Now rare.
A process (now illegal) for obtaining wine by adding water and sugar to solids left after the pressing of the juice from the grapes and then fermenting the mixture.

1914 A. G. Woodman & J. F. Norton Air, Water, & Food (ed. 4) ix. 191 The composition of the wine may be changed..by the various methods which are used for its ‘improvement’ such as fortification already mentioned, plastering, petiotization, etc.
