Etymology: < post-classical Latin alliatus seasoned with garlic (1620 in a British source) < classical Latin allium allium n. + -ātus -ate suffix2; compare classical Latin āliātum (in post-classical Latin also alliatum (4th cent.)) food seasoned with garlic, post-classical Latin aliata, alliata (feminine) garlic sauce (13th cent. in British sources).
Obsolete. rare.
Of a sauce: containing garlic as a main ingredient; flavoured with garlic.
