In pyruvic acid, C3H4O3 = CH3.CO.CO2H, also called pyroracemic acid, produced by the dry distillation of racemic or tartaric acid; a liquid smelling like acetic acid, and boiling at about 165° C. The acid occurs widely in living organisms as an intermediate in many metabolic processes, notably glycolysis. So pyruvic alcohol = acetyl carbinol, CH3.CO.CH2OH; pyruvic aldehyde = methyl glycoxal, CH3.CO.CHO; pyruvic kinase = pyruvate kinase; pyruvic oxidase, any enzyme or enzyme complex which catalyses the oxidation of pyruvic acid.
