[Ger.; sauer sour + kraut vegetable, cabbage, whence F. choucroute. Cf. obs. Du. zuurkruid; the mod.Du. word is zuurkool (kool cabbage).]
1. A popular article of diet in Germany, consisting of cabbage which has undergone an acid fermentation.
