III. 167 Barley-starch obtained by kneading barley⁓meal in water, and leaving the liquid to settle..leaves a pulverulent substance, to which Proust gave the name hordein. It appears, however, to be, not a definite substance, but a mixture of starch, cellular tissue, and an azotised body. |
