‖ estouffade, n. Cookery.|ɛstufad| Also estoufade. [Fr., ad. It. stuf(f)ata (see stufata n.), pa. pple. of stufare to stew, ult. f. Gr. τῦϕος smoke, steam; related Romance forms include Prov. estouffado, Cat. estofat, Sp. estofado, Pg. estufado.] A Southern French and Mediterranean dish of meat added to a base of onion, garlic, tomato, etc., fried in oil and cooked very slowly in a closed container; the meat so cooked.
