sucrase Biochem.|ˈs(j)uːkreɪz| [f. F. sucre sugar n. + -ase.] An enzyme that catalyses the hydrolysis of disaccharides to monosaccharides; spec. that which catalyses the hydrolysis of sucrose to glucose and fructose; = invertin, invertase, saccharase.
