A mixture of two flavonol glycosides, crocetin (a carotenoid-dicarboxylic acid) and alpha-crocin (a di-gentiobiose ester of crocetin), which are abundant in the stigmas and styles of saffron (Crocus sativus) flowers and have a prostaglandin-like structure. Intramuscular injection of crocetin in rabbits increases oxygen diffusion in plasma, and reduces serum cholesterol and the incidence of atherosclerosis. |
