(Corylus maxima), a shrub or tree of the genus Corylus of the family Corylaceae. It grows wild on the Balkan Peninsula and in southeastern Europe. The filbert is cultivated as an ornamental plant in Europe, Asia Minor (Turkey), and North America. In the USSR it is grown in the Crimea and Transcaucasia. It has been known in cultivated form since the times of ancient Greece and Rome as a nut-bearing plant, and there are many cultivated varieties. The nuts are large with a taste similar to almonds; they contain 50-60 percent fat and about 15 percent protein. The nuts of the filbert are used in the confectionery and food-processing industries.
