A high-carbohydrate, high-fibre, low-fat, low-sodium diet formulated in the 1940s by German-American physician W Kempner, consisting of unsalted rice, fruit, and limited amounts of fruit juices, tea, decaffeinated coffee and sugar. The diet was provided as part of a residential program which, coupled with exercise (walking, swimming), was used to manage cardiovascular disease, such as angina, congestive heart failure, high cholesterol, diabetes, hypertension, renal failure, obesity and vascular retinopathy.
