A high-carbohydrate, high-fibre, low-fat, low-sodium diet formulated in the 1940s by German-American physician W Kempner, consisting of unsalted rice, fruit, and limited amounts of fruit juices, tea, decaffeinated coffee and sugar. The diet was provided as part of a residential program which, coupled with exercise (walking, swimming), was used to manage cardiovascular disease, such as angina, congestive heart failure, high cholesterol, diabetes, hypertension, renal failure, obesity and vascular retinopathy.rice di·et
