AnthriscusAnthriscusa genus of plants of the family Umbelliferae. They are perennial, biennial, or annual herbs. These plants, which are often tall, have twice or thrice pinnate leaves. In some species the calyx is toothed. The petals are usually white. There are approximately 20 species in Eurasia; 12 species are found in the USSR. The most widely distributed is cow parsley (Anthris-cus sylvestris), which grows along moist, sparse forests, shrubbery, forest edges, parks, water meadows, and ravines; it sometimes grows as a weed along the edges of fields. Its root is used in cooked form as food. Salad chervil, or beaked parsley (A. cerefolium), is sometimes cultivated for its leaves, which are used as a seasoning. Anthriscus
