surimi A highly processed food “substrate” made of minced fish meat. Because it is nutritionally inferior (the soluble proteins are lost in processing), products made with surimi are listed as imitation food. It is primarily composed of pollock, and is blended with other foods (e.g., crabmeat) to impart flavour, or added as a filler for more expensive foods. |
