Subtilopeptidase A

 

(also called subtilysine), a bacterial proteolytic enzyme produced by Bacillus subtilis. Three forms of subtilopeptidase A have been isolated from various strains of the microorganism and obtained in crystalline form. Subtilopeptidase A belongs to the group of serine proteinases, whose active center has a residue of the amino acid serine that is important for enzymatic activity. Subtilopeptidase A has broad substrative specificity and hydrolyzes proteins more extensively than the animal proteinases pepsin, trypsin, and chymotrypsin.
