Mustard Oils

esters of isothiocyanic acid (isothio-cyanates) R—N═C═S (where R is the hydrocarbon radical); liquids with a very pungent odor. Many mustard oils are found in nature; allyl isothiocyanate, CH₂═CHCH₂ NCS, is a component of the essential oil of black mustard seeds.
