Leidenfrost's phenomenon

[′līd·ən‚frȯsts fə‚nam·ə‚nän] (thermodynamics) A phenomenon in which a liquid dropped on a surface that is above a critical temperature becomes insulated from the surface by a layer of vapor, and does not wet the surface as a result.
