Etymology: < French carbonade, carbonnade (c1629 in the passage translated in quot. 1651; 1534 in Middle French in sense ‘meat grilled over coals’; earlier in Old French as charbonnade (13th cent. in an apparently isolated attestation)) < either Old Occitan carbonado (see carbonado n.1) or Italian carbonata (see carbonado n.1). Compare earlier carbonade v. and carbonado n.1With the modern Belgian dish compare French carbonnade à la flamande (compare quot. 1935). For the Massinger quotation recorded by N.E.D. A stew typically made of beef braised with beer and onions, and associated with Belgium.In early use perhaps: a dish of grilled meat (cf. carbonado n.1).
