Etymology: Origin uncertain. Perhaps partly < (i) Anglo-Norman and Middle French bourse burse n., and partly < (ii) Middle French boursiel small purse (late 14th cent.; 13th cent. in Old French as borsel in the sense ‘swelling’; < bourse burse n. + -el -el suffix2), although neither word is attested denoting a dish in French. It is also possible that the English forms reflect two or more distinct words, possibly of different origins.Perhaps compare also Middle French boursault small purse (1462; < bourse burse n. + a suffix of uncertain origin).
