Etymology: < un- prefix1 + leavened adj.In unleavened bread , unleavened cakes , etc., in biblical contexts (see sense 1) ultimately translating Hebrew maṣṣāh matzo n.; compare azyme n. and the foreign-language forms cited at that entry. In quot. a1557 at sense 1 after Hellenistic Greek ἀζύμα (plural noun), specific use of neuter plural of ἀζύμος unleavened (see azyme n.).
1. Chiefly of bread, cakes, etc.: not leavened; made without yeast or other raising agent.Unleavened bread is eaten by Jews during the Feast of Unleavened Bread (following Passover), and also as part of the celebration of the Eucharist in the Roman Catholic Church and in most Protestant churches.In quot. a1557 as n., used elliptically to denote the Jewish Feast of Unleavened Bread.
