Etymology: Apparently < a Carib word recorded in the 17th cent. as †taumali, perhaps with an original sense ‘sauce’ (see note), perhaps via French; compare French taumalin (18th cent. or earlier; the final -n perhaps reflects a Carib possessive suffix).Compare the following earlier use of the Carib word in an English context (form transmitted via French):1666 J. The digestive gland or hepatopancreas of a lobster, esp. when used as a foodstuff or ingredient; (now also) the hepatopancreas of a crab used in the same way.Lobster tomalley, which turns green when cooked, is considered a delicacy and is eaten either on its own or mixed into sauces.
