Origin: A borrowing from Spanish. Etymon: Spanish tinga.
Etymology: < Mexican Spanish tinga (1887 in tinga poblana : see poblano n. and adj.), apparently a specific use of tinga disorder, clamour; further etymology unknown.Compare the following earlier example of the Spanish word in an English context:1927 T. P. Terry Guide to Mexico (rev. ed.) 244 Tinga is hashed pork or chicken. The tinga poblana is very popular in Mexico City.
In Mexican cookery: a dish of shredded chicken, beef, or pork stewed in a spicy tomato-based sauce, often served as a filling in tacos, tortillas, etc.Variations on the traditional recipe include the use of fish or vegetables instead of meat.
