Etymology: < French suint (c1300 in Old French) < suer to sweat (early 12th cent.; end of the 10th cent. as suder ; < classical Latin sūdāre : see sudate v.) + -in -ine suffix¹, with remodelling of the ending after nouns ending in -oint , especially oint grease (compare oint v.).

Originally: the yolk (yolk n.²) or grease found in the wool of sheep. In later use spec.: the water soluble part of the yolk, which consists of dried secretions from a sheep's sebaceous and sweat glands and is rich in potassium salts and fatty acids.
