Etymology: < acetic adj. + acid n., after French acide acétique (1787 in the source translated in quot. 1788). Compare German Essigsäure , lit. ‘acid of vinegar’ (1785 or earlier; 1781 or earlier in more general sense ‘(as a property of fruit) acidity suitable for making vinegar’). Compare earlier acetous acid n. at acetous adj. Compounds. Compare acetate n., acetite n.
Chemistry.
A weak acid which gives vinegar its characteristic taste and pungent smell, and in relatively pure form exists as a clear viscous liquid or glassy solid; also called ethanoic acid.Acetic acid is a carboxylic acid; CH3COOH. When pure and anhydrous, it is known as glacial acetic acid. Vinegar is a dilute solution of acetic acid.
