Forms:

α. 1600s S. Hughs bones, 1600s Saint Hughes bones, 1600s Saint Hughs bones, 1600s St. Hughes bones, 1600s– St. Hugh's bones, 1800s Saint Hugh's bones, 1800s– St Hugh's bones.

γ. 1600s Hugh's bones.

Also with upper-case initial in final element.
Origin: Formed within English, by compounding. Etymons: saint adj., sir n., proper name Hugh , bone n.1
Etymology: Partly (in α. forms) < saint adj. + the genitive of the male forename Hugh + the plural of bone n.1; partly (in β. forms) < sir n. + the genitive of the male forename Hugh + the plural of bone n.1; partly (in γ. forms) < the genitive of the male forename Hugh + the plural of bone n.1With sense 1, compare the following account of the origin of the expression, although it is uncertain whether this reflects an older tradition or the author's interpretation:1637 Deloney's Gentle Craft (new ed.) iv. sig. C3 How the Shoomakers stole away Saint Hughes bones, and made them working tooles thereof, and the vertue that they found in the same: whereby it came, that when any man saw a Shoomaker travelling with a packe at his backe: they would presently say: There goes Saint Hughes bones. Sense 2 apparently shows a (humorous) development from sense 1.
