Origin: From a proper name. Etymon: proper name Smithfield.
Etymology: < Smithfield (c1145 as Smethefelda), the name of a locality in central London, England, which was formerly renowned as a market for cattle and horses, and subsequently served as the city's central meat market.The place name originated as a combination of smeeth adj. and field n.1, with the sense ‘level or flat enclosure’, and was originally applied to a broad grassy area running from the medieval city walls to the eastern bank of the River Fleet. A livestock market is documented at this site from at least the 2nd half of the 12th cent.; the existing meat market on Charterhouse Street was established by Act of Parliament in 1860 and began trading in 1868.

Etymology: < Smithfield, the name of a town in Virginia, where this method of curing meat originated.The place name reflects the surname of landowner Arthur Smith IV, who established the settlement as an incorporated town in 1752.
U.S.
Used attributively to designate a type of ham, or occasionally bacon, cured and aged by a special process which originated in Smithfield, Virginia. Properly applied only to hams cured and aged by this process within the corporate limits of Smithfield.
