Origin: A borrowing from Hindi. Etymon: Hindi sāg.
Etymology: < Hindi sāg greens, vegetable, vernacular adaptation of Sanskrit śāka. Compare Bengali śāk, Marathi śāk.
Originally South Asian.
Any of various edible leafy green vegetables, typically spinach. Also: an Indian dish made with spinach or (occasionally) another green vegetable.

1783 F. Gladwin tr. Emperor Akber Ayeen Akbery I. i. 79 Sawg, is made of spinnage, and many other greens: it is the most natural dish that is cooked.
1852 Proc. Agri-Hort. Soc. Punjab 1 65 Nine maunds of sag are sold in the Khangur market for one rupee.
1954 S. Chowdhary Indian Cooking 94 Sāg is a traditional Indian dish, and is particularly tasty when eaten with makkī kī rotī.
1987 Los Angeles Times (Nexis) 25 Oct. 106 Saag or greens (in this case spinach seasoned with a combination of spices and mixed with cream) is made into a sauce.
2004 N.Y. Times (Nexis) 23 May 6 Within the restaurants, twinkling lights draped mirrored walls, and diners took their soupy saag to the thump of disco raga.
