Origin: A borrowing from Dutch. Etymon: Dutch rolletje.
Etymology: < Dutch rolletje, literally ‘little roll’ ( < rol roll n.1 + -tje, diminutive suffix), although this is apparently not recorded in this specific sense in dictionaries of Dutch.In form rolla-cheese apparently showing folk-etymological reanalysis.
U.S. Cookery. Now rare.
A dish of Dutch origin consisting of seasoned minced beef wrapped in tripe and usually boiled, pickled, and served in round slices.
