Origin: A borrowing from Urdu. Etymons: Urdu roġan još; Urdu roġan gošt.
Etymology: Partly (in α. forms) < Urdu roġan još (preparation of mutton) stewed in ghee < Urdu roġan oil, ghee ( < Persian rauġan , early New Persian rōġan ; compare Avestan raoγna- butter, of uncertain origin) + -još stew, specific use (in compounds) of †još act of boiling, heat ( < Persian jōš , further etymology uncertain), and partly (in β. forms) < Urdu roġan gošt < roġan (see above) + gošt meat ( < Persian gōšt , apparently ultimately a derivative with the sense ‘made from beef’ of the same Indo-European base as cow n.1).It is not entirely clear whether Urdu roġan još or roġan gošt was the original formation. The γ. forms apparently reflect a colloquial pronunciation of Urdu gošt as goš , which may also have facilitated the substitution of gošt for još or vice versa. The δ. forms are probably due to confusion of α. and β. forms within English.

2002 Observer 12 May (Food Monthly Suppl.) 15/3 Back at the Cinnamon Club, they do serve a rogan josh, for which they import a spice called the rattan jyot, the bark of a tree that imparts the dark red colour to the lamb curry.
