Biochemistry.
One of the three forms of vitamin B6, a weakly basic, crystalline solid which is important in the metabolism of unsaturated fatty acids, occurs esp. in cereals, liver oils, and yeast, and is also manufactured commercially.Systematic name: 2-methyl-3-hydroxy-4,5-bis(hydroxymethyl)pyridine, C8H11NO3.It is readily converted inside the body to the other forms of vitamin B6, pyridoxal and pyridoxamine, with which it usually occurs. Of the three forms, pyridoxine is the one most closely identified with the vitamin (see e.g. quot. 1970).
