Biochemistry.

One of the three forms of vitamin B₆, a weakly basic, crystalline solid which is important in the metabolism of unsaturated fatty acids, occurs esp. in cereals, liver oils, and yeast, and is also manufactured commercially.Systematic name: 2-methyl-3-hydroxy-4,5-bis(hydroxymethyl)pyridine, C₈H₁₁NO₃.It is readily converted inside the body to the other forms of vitamin B₆, pyridoxal and pyridoxamine, with which it usually occurs. Of the three forms, pyridoxine is the one most closely identified with the vitamin (see e.g. quot. 1970).
