Etymology: In sense 1 < the name of Louis Pasteur (see Pasteur n.) + -ization suffix; compare slightly earlier Pasteur treatment n. at Pasteur n. 2, Pasteurism n., and slightly later pasteurize v. 2. In sense 2 < pasteurize v. + -ation suffix; compare French †pastorisation (1887; now pasteurisation (1897 or earlier)).

The action or process of subjecting milk, wine, food, etc., to partial sterilization that destroys most of the microorganisms and enzymes present, making it safe for consumption and improving its keeping quality.Pasteurization is traditionally carried out by maintaining drink or food at an elevated temperature for a set period of time, a method which Pasteur himself used only on wine and beer. More recently it has also been performed by means of ionizing radiation.
