Etymology: < Spanish olla pot (1228–39), stew of meat and vegetables (1588) < classical Latin olla pot, urn, variant of early classical Latin aulla , aula (the usual forms in Plautus); further etymology uncertain and disputed: perhaps ultimately related to the Indo-European base of oven n. In sense 2 directly < classical Latin olla (see above). Compare Catalan olla pot (1162), Old French, Middle French ole pot (late 12th cent.; compare also French oille stew of meat and vegetables (1673; < Spanish olla )), Old Occitan, Occitan ola pot (c1200), Portuguese †ola pot (13th cent.; compare also olha stew of meat and vegetables (a1666; < Spanish olla )), Italian †ola pot (late 13th cent.), olla pot (14th cent.; a1612 in sense ‘urn’). Compare olla podrida n.The forms ollia , ollià reflect the palatal -ll- of Spanish olla (compare olio n.).
