Origin: Formed within English, by compounding; modelled on a German lexical item. Etymons: myo- comb. form, globin n.
Etymology: < myo- comb. form + globin n., after German Myoglobin (H. Günther 1921, in Arch. f. Pathol. Anat. u. Physiol. 230 150; originally suggested but rejected by Mörner (who favoured Myochrom : see myochrome n.), as reported by O. Hammarsten 1897, in Jahresbericht über den Fortschritt der Tierchemie 27 457).
Biochemistry.
The protein responsible for oxygen transport and storage in muscle, structurally resembling one of the subunits of haemoglobin.

1993 Ontario Beef Farmer Sept. 33/1 A protein called myoglobin in the muscle will continue to oxidize and form ‘metmyoglobin’, which produces the darker, brownish-red colour [in beef] that turns consumers away.
