Etymology: < French ballottine (1739; also ballotine) < ballote , ballotte small ball (although this is apparently first attested slightly later in a culinary context: 1742; < balle bale n.3 + -ote , -otte , variants of -ot -ot suffix) + -ine -ine suffix4.

A piece of boned meat or fish rolled around any of various fillings; a dish of this.
