Origin: A borrowing from Japanese. Etymon: Japanese miso.
Etymology: < Japanese miso (attested c738; alluded to as in use by 701; 1603 in Vocabulario da Lingoa de Iapam), perhaps ultimately < Koguryo (an extinct language of northern Korea); compare Korean meju soybean malt, Manchu misu(n) thick sauce, jam, fermented bean paste. Compare French misoun (1825 or earlier).The modern Korean word for ‘soybean paste’ is toenjang ; compare Chinese dòujiāng , jiāng . On the history of the product, compare:1996 R. Hosking Dict. Japanese Food 212 Miso derives from the Chinese chiang and it could be that two different traditions, one coming via Korea and the other direct from China, have evolved the same product by slightly different methods. O.E.D. Suppl. (1976) gives the non-naturalized pronunciation (mi·so) /ˈmiso/. In form midsu after German †Midsu (1777 in printed version of text translated from manuscript in quot. 1727 at main sense; German Miso).
A paste, made from fermented soya beans and barley or rice malt with salt, used in Japanese cookery. Also in miso paste.
