Origin: A borrowing from French. Etymon: French merguez.
Etymology: < French merguez (c1950) < Arabic mirkās (also as mirqās; plural marākis, marāqis), in form influenced by colloquial Maghribi Arabic mergāz, merkāza; further etymology uncertain.The Arabic word is first attested in Spain in the 12th cent., whence it passed to north-western Africa, and, in the form with -g- (for -q-) characteristic of Bedouin speech, was ultimately borrowed into French. A spicy sausage made of beef and lamb, and coloured with red peppers, originally made in the French colonies of North Africa, but later popular also in France and elsewhere. More fully merguez sausage.
