1. The fat surrounding the entrails of an animal; suet. Also midgen-fat. N.E.D (1906) has the additional definition ‘In modern dialect use the fat about the kidneys of a pig; leaf-lard’. This definition is not supported by Eng. Dial. Dict., s.vv. midgen sb. and midgerum sb., both of which are defined as intestinal fat; no examples of the word were recorded by Surv. Eng. Dial. under Question III. 12. 7, ‘the inner layer of fat round the kidneys of the pig’.
