β. 1700s– mangold-wurzel, 1800s mangold-wurtzel, 1800s mangold-würzel.

Origin: A borrowing from German. Etymon: German Mangoldwurzel.
Etymology: < German Mangoldwurzel (also Mangelwurzel ) < Mangold chard, beet (Middle High German mangolt , manegolt (13th cent.; further etymology uncertain)) + Wurzel root (see wartwale n.). The German compound > Dutch mangelwortel; the simplex Mangold > Italian regional (Piedmont) manigot. The German form Mangelwurzel arose from, or was reinforced by, a folk etymology deriving it < Mangel shortage, lack: compare the English equivalents at scarcity n. 7 and French disette beetroot (now rare or obsolete in this sense). The etymology of German Mangold ultimately < the Old High German personal name Managolt suggested by N.E.D. (1905) s.v. is now usually rejected. N.E.D. (1905) gives an alternative pronunciation (mæ·ŋgŏldˌwɒ̄·ɹz'l) /ˈmæŋɡəldˈwəːz(ə)l/, reflecting the form mangold-.
A variety of the beet, Beta vulgaris, grown for its large, swollen, yellow-fleshed ‘root’ (formed from the stem base, the hypocotyl, and the upper part of the tap root) which is used as cattle feed.
